People go nuts over Russian Lit with Gary Morson. I've never taken it, personally, but it takes 600 students per quarter, and they all seem to love it. The professor sounds like he's really interesting and involved with students on an impressively individual level. Intro to Fiction and Intro to Psychology also attract a lot of people. Human Sexuality used to be a big deal, but due to some controversy, that class has not been offered this year. I've also met a lot of people who like Sound Patterns of Human Speech, because it's a linguistics class that counts as a science credit, and it's not too much work.
